The other dish we’ll be enjoying during the Super Bowl is tuna pasta salad. I can’t remember the last time I had pasta salad and I’m really looking forward to it. Also, another great dish to serve at any get-together, party or BBQ. The version I’m making is inspired by this recipe.
What you’ll need
2 -4 cups cooked pasta
4-5 stalks chopped celery
4-5 chopped green onions
2 chopped bell peppers (any color you want)
1 cup mayonnaise (you might need more)
4 tbsp Dijon mustard
4 tsp sugar
4 tsp white wine vinegar
Old bay seasoning to taste
Pepper to taste
1 can large black olives, sliced
1 jar green olives with pimiento, cut in half length-wise
3-4 cans of tuna
Cook pasta according to box “al dente” directions. Drain, rinse and let cool. In a bowl, mix all sauce ingredients. Add celery, onions, peppers, and pasta. Fold all ingredients together until mixed well and pasta is covered in sauce. Cover with plastic wrap and place in refrigerator to chill for at least 4 hours, but overnight is better.
A couple hours before you plan to serve, add the olives and the tuna. Fold into salad until mixed well with all ingredients. Cover and chill until you’re ready to serve.
